“Asparagus Officinalis” Soup
Asparagus is considered "cold hardy" because it is able to tolerate cold temperatures and continue growing even in climates with frost or freezing temperatures. It is one of the first crops to emerge in the spring, often pushing up through the soil while there is still snow on the ground. Asparagus is able to withstand temperatures as low as 20-25°F (-6.7 to -3.9°C) and can continue growing even in temperatures as low as 50°F (10°C).
